Easy Meal Creation-Fish Wrap

Meals do not have to be rocket science or extravagant.  A few ingredients and I made a nice meal.

I took off of work today and thought of a fish wrap for lunch.  I defrosted a tilapia fillet.  Took out some frozen mix of peppers and onion.  Removed a wrap from its package to bring to temperature because it was in the fridge.  Cooking process pics below:

1-Tilapia fillet

2-Peppers and onion frozen mix
3-salad mix with Boathouse Farms yogurt ranch dressing with a little cayenne
4-one 10 inch Tumaro's New York Deli Style sourdough wrap.  This wrap is huge and is only 80 calories with 9grams of Fiber and 7grams of protein.

When peppers are frozen they contain a bit of water.
I cooked the peppers in a little coconut oil until they start to brown (caramelize)

Remove from pan and cook fish in a little more coconut oil


After the fish is cooked break it up into chunks with the spatula and
add the peppers back to the pan.  Toss and heat all together.              

Place wrap on top of pan to heat a little and it becomes more pliable.




Place fish mixture on top of wrap and top with salad that has already
been mixed with ranch dressing and cayenne pepper (I like the added mild heat)

As you can see this wrap is huge and big enough to hold all the
fish mix goodness.  Remember...I like bulk.  No mini servings for
me.



All done!                                                                                          IT WAS FREAKIN FANTASIC!
